Of all of the recipes out there to choose from, I came to this one, and SAVED this one because it was the most elegant, no nonsense presentation, and yet, it was also the most fun to make. I also loved the creative recipes alongside it; especially the way they did not interrupt the recipe I was trying to make with videos and suggestions for other unrelated bits like certain other websites. These were so delicious and easy to make! Using a large batch of cold mashed potatoes, I was able to make 14 croquettes filled three ways: asiago cheese only, pancetta only, and asiago mixed with pancetta.
Served these tapas-style with gambas al ajillo and aioli sauce and they were a hit! Love that these could be baked in the oven and come out so good and crispy - so much easier than frying and healthier to enjoy. Just what I like. Love your down to earth recipes. Thank you so much. I think if they were made up and then frozen before being cooked, the potato would seep water during the defrosting stage. Hope that works for you.
These are amazing! Hi there, I'm not sure what I did wing, I followed the recipe exactly but mine leaked cheese and potatoe at 10 mins. My oven was not fan forced and at The breadcrumbs didn't brown, kind is still raw. We have a very similar recipe. Our recipe is close to this one, except for the Parmesan cheese and the chives, which we omit.
Instead, we make a very dry version of Picadillo ground beef with sofrito ; scoop it into a tight ball; and cover it with the mashed potatoes before preparing them for frying. This recipe has an infinite number of variations you can try. Ingredients Makes 18 Servings 2 large egg yolks. Vegetable oil for frying; about 2 cups. Preparation Step 1 Mix egg yolks, mashed potatoes, Parmesan, chives, and flour in a medium bowl. Step 2 Beat eggs in a bowl; place breadcrumbs in another bowl.
